The Tasting Journey
In keeping with Canarian tradition, we recommend sharing these dishes among diners. Our menu represents the best of our farm's harvest, updated weekly. Because all our produce is grown and nurtured directly on the finca—never bought from external suppliers—our dishes vary depending on the season and daily availability of the harvest.

Sardinas de La Tiñosa Maceradas
Fresh local sardines from La Tiñosa coastal area, marinated in home-brewed volcanic wine vinegar, local herbs, and sea salt.

Gueldes Fritos
Traditional crispy fried local sand smelts from the Lanzarote coast, served with roasted garlic aioli and a touch of fresh lemon.

Carabinero con Huevo Frito y Papa
Exquisite grilled local scarlet shrimp, served over a bed of slow-cooked farm potatoes and a crispy organic fried egg.

Revolcón de Batata
A rich mash of volcanic sweet potatoes with artisanal Chacón chorizo, premium Iberian ham, green garlic, and fried organic eggs from the Tabayesco valley.

Costillas con Piña y Verdura
Tender pork ribs slow-cooked with local sweet corn on the cob, sweet potatoes, and seasonal vegetables freshly harvested from our garden.

Carne de Cabra Estofada
Highly traditional Lanzarote goat stew, slow-braised for hours with local Malvasía red wine, garlic, and aromatic wild herbs.
